I´m not sure if it´s what you´re asking, but to change font colours (and other colours) in SkinStudio, you need to click on ´Miscellaneous´ then ´Colours´ tabs in the Explorer side of SkinStudio. Then to the right of the preview you´ll see the colours that can be edited. Like all the Window colours (Window borders, background and text). Good luck :)
